Canon R6 I Beginner Question Exposure R6

May or may not have some storms next week, trying to make sure lightning bolts are not over exposed and blown out. Daytime.

So I set camera at preferred settings maybe lets say F16 and 1 second ISO 100.

I the focus on distant cloud to gain infinity focus.

Then I press shutter half way and turn flat dial to the right and exposure guide in viewfinder moves to 1 stop over exposed?

Then I want set camera up on tripod and set it to take photos for half and hour this setting will stay the same?

Beginner question not explained very well apologies if I look like a dill

And thanks for those who reply nicely :)

Will have RP going as well but a "normal" exposure trying to double my chances.
