I have my camera setting AF operation set to one stop focus, at area to one to the square with small squares around it. I’m using back button focusing. After I select the spot, it will not keep what I selected. the camera has focused elsewhere:?

Any ideas what setting I have that is causing this?

Are you pressing and then releasing the back button? If you press to set your focus button, and then let go, the camera will not change focus and you are free to re-frame the scene.
 
Did you remember to remove AF from the shutter button?
Even if I didn't remove the AF from the shutter button, it does not focus where I put the focus point. I've toggled through all the different focus selections from the smallest to the focus brackets. It's as if the auto focus is on.

Yes, but even when I don't re-frame, it does not focus where I set my focus point.
 
I'm using One Shot focus mode. I toggled using the different focus area modes from smallest dot to the flexible zones. And still, it focuses on random. My example above showed how I was using the square focus but then It focused on a larger area. Subject to detect is Auto, should that be set to none?

I'm not sure if Whole Area Tracing Servo AF is on. I'll check tonight.

Bear with me, I’m kinda dim. Explain like I’m 5.

So, you point the camera at something and hit the back button and let go. Does it beep, and focus correctly, at first and then wander off like a drunk uncle, or does it not even focus correctly to begin with?

It acknowledges the focus where I point. My brain is a bit fuzzy from lack of sleep right now, but I’m going through John Greengo’s r6 mark ii course to see what my issue might be. I have a feeling, I might have something where facial recognition is over writing my focus.
